Carrot and jicama salad
Green cactus salad

Carrot and jicama salad

  • 3 or 4 carrots, grated
  • 1 jicama, peeled and grated
  • handful of dried cranberries, chopped
  • handful of pecans or walnuts, chopped
  • Juice of 1 lime
  • Salt to taste

Combine all ingredients in a bowl and enjoy.

 Green cactus salad

  • 1 pound of nopal paddles (cactus)
  • 1 cucumber, chopped into round slices
  • 1 avocado, cubed
  • olive oil to dress
  • Salt and pepper
  • Fresh lime juice
  • Toasted squash seeds

Chop the nopals into bite-sized strips. Cook in a lightly oiled frying pan until tender. Cool. Add remaining ingredients in a bowl and top with queso fresco if you can find it at the store.
